Tacos gobernador are filled with succulent shrimp, melted cheese, peppers and onion, all folded inside a golden, slightly crispy flour tortilla. Originating from Mazatlan, Sinaloa, they were created for a state governor and have since become one of Mexico's most famous tacos.
History & Origin
Tacos gobernador were created at the restaurant Los Arcos in Mazatlan, Sinaloa, in the 1980s, when the state governor paid a visit and asked for something special. The chef improvised these shrimp and cheese tacos, and the name stuck for posterity. Since then, they have become a gastronomic emblem of Sinaloa and are served in seafood restaurants throughout Mexico. The key to their flavor is the contrast between the juicy shrimp, the melted cheese and the crispy tortilla.

Method

Dice the onion, bell pepper, poblano chile and tomatoes into small cubes. Finely chop the garlic.

Sauté the onion and garlic in a skillet with oil over medium heat until transparent. Add the pepper and poblano chile, cook for 3 minutes.

Add the shrimp seasoned with salt and pepper. Cook for 2-3 minutes until pink. Add the tomato and cook 2 minutes more.

Heat a tortilla on a comal (griddle), place shredded cheese on one half, add the shrimp mixture on top and fold the tortilla in half.

💡 Press gently with a spatula so the cheese melts and seals the taco.

Brown the taco on both sides until the tortilla is crispy and the cheese is melted. Repeat with the rest. Serve with lime and salsa.
