History & Origin
Supreme nachos represent the ultimate evolution of Ignacio Anaya's original concept: if the first nachos were a simple improvisation of tortilla chips and cheese, supreme nachos are the most elaborate, substantial and celebratory version that Tex-Mex cooking can offer. This 'loaded' version appeared on American menus during the 1970s, when Tex-Mex restaurants began to compete to offer the most spectacular version of the snack. Taco Bell, the world's best-known Tex-Mex fast-food chain, popularised the 'Nachos BellGrande' in 1990, which included seasoned ground beef, beans, melted cheese and sour cream in a giant portion. The seasoned ground beef - known in the Tex-Mex world as 'taco meat' - is prepared with chili powder, cumin, garlic and oregano, and is technically different from any minced meat preparation you would find in Mexico. It is a purely Texan invention that has become one of the most recognisable flavours in the world. Supreme nachos are the perfect food for watching sport, parties and family gatherings, where the opulence of the toppings becomes synonymous with celebration and abundance.

Prepare the Tex-Mex meat: fry the ground beef in a skillet until browned. Drain off excess fat and season with chili powder, cumin, garlic powder, oregano, salt and a little water. Cook for 5 minutes.

💡 Tex-Mex seasoned ground beef uses more cumin and chili powder than any typical Mexican preparation.

Spread the tortilla chips on a large heatproof tray. Distribute the seasoned ground beef and refried beans over the chips evenly.

Generously cover with grated Cheddar cheese and melting cheese. Bake at 200°C for 8–10 minutes until the cheese is completely melted and bubbling.

Remove from the oven and add the cold toppings: spoonfuls of guacamole, pico de gallo, sour cream, sliced jalapeños, black olives and chopped cilantro. Serve immediately.

💡 Serve in the same baking tray to keep warm for longer.
