History & Origin
Frijoles puercos are a legendary Sinaloan preparation whose name, meaning dirty or indecent beans, refers to the generous amount of rich ingredients piled on top: chorizo, bacon, pork scratchings, cheese and chiles. This dish was born in the ranching culture of Sinaloa and became the obligatory accompaniment to Sinaloan barbecues.

Fry the bacon pieces until crispy. Remove and fry the crumbled chorizo in the same fat until cooked.

In the same fat, add the refried beans and cook, stirring, until hot and creamy.

Add the chorizo and half the bacon to the beans. Add the chopped jalapenos and mix.

Transfer to a large plate, sprinkle generously with crumbled fresh cheese, remaining bacon, pork scratching pieces and chopped onion. Serve with tortilla chips.
