Lomitos de Valladolid is one of the most emblematic stews of Yucatecan gastronomy, originating from the beautiful colonial city of Valladolid. The sauce distinguishes this stew: roasted tomato, xcatic chile (a sweet aromatic chile exclusive to Yucatan), roasted purple onion, garlic and spices like allspice, Yucatecan oregano and cumin. It is served with white rice and handmade maize tortillas.

Method

Corta 800 g de lomo de cerdo en cubos de 2 cm. Sazona con sal, pimienta y orégano. Sella en sartén con aceite. Reserva.

Asa 6 jitomates, 1 cebolla morada en cuartos, 4 dientes de ajo y 3 chiles xcatic (o güeros) en el comal.

💡 Si no encuentras chile xcatic, usa chile güero.

Licua los jitomates, cebolla y ajo asados con pimienta gorda, comino y orégano yucateco. Cuela.

Fríe la salsa 5 minutos. Añade los cubos de cerdo y los chiles asados enteros.

Agrega 250 ml de caldo de cerdo, tapa y cocina a fuego bajo 35-40 minutos.

Rectifica sal. Sirve con arroz blanco y tortillas de maíz.
